Artichoke & Olive Marinated Salad


This is a great no-fuss appetizer, especially if you need something last minute. It’s also a good dish that can be easily modified, depending on what ingredients you have. We got this idea from our friends Molly S. and Amanda H.

1 can black olives
1 can artichoke hearts
1.5 tbs Olive oil
Splash of red wine vinegar
1 clove of garlic, minced
2 anchovy filets, chopped
Dash of red pepper flakes, dried basil
Salt and pepper to taste

Drain olives and artichoke hearts. Quarter artichoke hearts, combine hearts and olives in small bowl. Add other ingredients. Stir and enjoy with crusty loaf of bread!
Optional: let marinate briefly in a covered bowl for added deliciousness!

As an appetizer.
With an aperitif.
Any season.
With red or white wine.
